Ingredients:
Chicken, small cut1 kg
'Kesum' leaves20 strings
Torch ginger flower, sliced4 no
AJI-NO-MOTO®1 tsp
Salt2 tsp
Bamboo, cleaned2 pcs
Tapioca leaves, soaked with salt for 5 minutes, rinsed and strained1 bouquet
Ingredient A: ground
Ginger 50 g
Garlic5 cloves
Shallot 6 no
Lemongrass2 stalks
Method:
  1. Marinate the chicken with ground ingredients (A), kesum leaves, torch ginger flowers, AJI-NO-MOTO® and salt.
  2. Divide the marinated chicken into two and spoon into the bamboo.
  3. Stuff the ends of the bamboo with tapioca leaves.
  4. Bake like 'lemang' style or steam until cooked.
  5. Ready to serve.
